STEMM Idol Speaker Jennifer Dalton

In theme with Hunger and Homeless Awareness Week, observed Nov. 12-19, CJ welcomes dietitian Jennifer Dalton as the month’s first STEMM Idol speaker on Tuesday, Nov. 13.

Merriam-Webster defines dietetics as, “the science or art of applying the principles of nutrition to diet.”  The field is anchored in subject areas of math and science, and can be found in programs of study at colleges and universities around the world including just down the road at the University of Dayton, where Dalton serves as the director of the Didactic Program in Dietetics, a division of the school’s Department of Health and Sport Science.

Serving in her first year as a full-time faculty member there, professor Dalton instructs undergraduates taking upper level courses and serves as an advisor to more than 70 students enrolled in the program. She is also a board member and president elect of the Dayton Dietetic association, and holds her bachelor’s degree from Ohio State University as well as a Master of Science in Nutrition from the University of New Haven.

The Didactic Program in Dietetics at UD is accredited by the Accreditation Council on Education of Nutrition and Dietetics (ACEND). Upon graduating, UD dietetics majors leave the university prepared to become Registered Dietitians, or experts in food and nutrition.

Jobs for dietitians exist not only within the traditional realm of the health care system, but also in fields such as education, journalism, sports medicine, culinary arts, laboratory research, and the food and beverage industry. According to numbers released by the Commission on Dietetic Registration (CDR), there were nearly 86,000 Registered Dietitians in the United States as of September 1, 2012. Close to 4,000 are registered in the state of Ohio.

The CDR is the credentialing agency for the world’s largest organization of food and nutrition professionals, the Academy of Nutrition and Dietetics (formerly the American Dietetic Association).
